Squash the Status Quo

Well. It’s official. I am the luckiest bar owner alive.
Chef @zoemonstere demonstrated this evening that she not only has the chops but also the creativity and imaginative palate to execute an absolutely delectable and exquisite five-course dinner.
Every course was unique with layers of flavor, all compelling and complimentary. Yet the overarching theme she chose, “Squash the Status Quo (every course has squash in it except for dessert),” was perfectly translated.
FIRST
Bruschetta with roasted spaghetti squash, @portlandcreamery chèvre and fried sage
SECOND
Baby arugula salad with roasted butternut squash, honey vinaigrette, blood orange and pickled blueberries
THIRD
Roast medley of lightly sweetened beet, carrot and spiced delicata with dill tzatziki
FOURTH
Hazelnut-tarragon crusted salmon, acorn squash purée and microgreens with cherry compote
FIFTH
Blood orange creme brûlée with blood orange segments and pickled blueberries
